Ingredients
For the Chicken:
- 4 chicken thighs (bone-in, skin-on)
- 2 tbsp Zoë Italian Spice Rub Blend
- 2 tbsp Zoë Tuscan Herb Extra Virgin Olive Oil
- Juice of 1 lemon
For the Vegetables:
- 1 zucchini, sliced
- 1 red bell pepper, chopped
- 1 red onion, sliced
- 2 tbsp Zoë Tuscan Herb Extra Virgin Olive Oil
- 1 tbsp Zoë Italian Spice Rub Blend
- Zoë’s Salt and Pepper, to taste
Instructions
- Prepare the Chicken:
- Preheat oven to 400°F (200°C).
- Rub chicken thighs with Zoë Italian Spice Rub Blend, drizzle with Zoë Tuscan Herb Extra Virgin Olive Oil, and squeeze lemon juice over them. Marinate for 20 minutes.
- Prepare the Vegetables:
- Toss zucchini, bell pepper, and onion with Zoë Tuscan Herb Extra Virgin Olive Oil, Zoë Italian Spice Rub Blend, and Zoë’s Salt and Pepper. Spread on a baking sheet.
- Roast:

- 4 cod fillets

- Prepare the Cod:
- Preheat oven to 375°F (190°C).
- Rub cod fillets with Zoë Italian Spice Rub Blend and drizzle with Zoë Tuscan Herb Extra Virgin Olive Oil. Place in a baking dish and top with lemon zest and juice. Bake for 12-15 minutes, or until the fish is opaque and flakes easily.
- Cook the Orzo:
