It's not easy to make good olive oil. First we start by growing the healthiest olive in the World the Koroneiki olive. It produces olive oil with some of the highest Polyolefin's and monunomsatutated fats, then we keep are trees very small to ensure that all the fruit on the tree stay healthy as well as keep the watering to a minimum to give it a buttery texture.
