The secret ingredient is love and high quality extra virgin olive oil! I love a simple pound cake but I decided to make mine slightly more interesting with an added layer of chocolate to the top. This recipe is easy to make and delicious.

Ingredients
Wet Mixture
- 1 cup Plain Greek Yogurt
- 1/2 cup Extra Virgin Olive Oil
- 1 cup Granulated White Sugar
- 3 whole Eggs
- 2 tsp Pure Vanilla Extract
Dry Mixture
- 1 1/2 cups All Purpose Flour
- 1/4 tsp Sea Salt
- 1/8 tsp Baking Soda
- 1 tsp Baking Powder
- 2 Tbsp Cocoa Powder
Process
- Preheat oven to 350ºF
- Sray a 9×5 inch loaf pan with nonstick spray
- In a large bowl, beat together using a whisk Greek yogurt, sugar and olive oil together
- Add the eggs one a time to that same bowl
- Add vanilla extract to your wet mixture
- To the mixture, add flour, salt, baking soda and baking powder, set aside
- Reserve some batter on the side and add your cocoa powder to that
- With a spatula. scrape the vanilla mixture it into the pan
- Add your chocolate mixture over the top of the vanilla mixture, marble it in if desired
- Bake the cake for 50 to 55 minutes, or until it is golden
- Cool on a wire rack
- Once cooled, top off with powdered sugar for presentation
- Serve and enjoy!
Notes
If you stick a toothpick and it comes out dry it’s ready to go! Best enjoyed with a side of coffee or tea.
