We’ve all heard of a simple lemon olive oil cake before but did you ever try making a chocolate olive oil cake? It’s simple to make, crunchy on the exterior and soft on the interior.

Ingrédients
- 3/4 cup Huile d'olive extra vierge, ( I used Zoë Olive Oil
- 3 entiers Œufs
- 1 1/4 tasse Sucre blanc granulé
- 2 cuillères à café Extrait de vanille pure
- 1/2 tasse de Poudre de cacao
- 1/2 tasse de Water, (boiled/hot)
- 1 tasse de Farine tout usage
- 1/2 cuillère à café Bicarbonate de soude
- 1 cuillère à café Sel
- 1/3 de tasse de Sucre en poudre, (sifted for garnish, optional)
Processus
- Pre-heat oven at 350F
- Grease a springform pan and set aside
- In a large bowl, add your eggs, olive oil, sugar and vanilla extract whisk together until incorperated
- In a small bowl, add cocoa powder add your hot water and mix until combined
- Add cocoa mixture to your large bowl and whisk until there’s a chocolate mixture
- To your large bowl, add the flour, baking soda and salt and whisk again
- Bake at 350 for 30-35min or until the center is dry enough for a toothpick to be removed clean
- Cool at room temperature before adding powdered sugar for garnish
