- 6 whole Russet Potatoes, (wedged and peeled)
- 1 Tbsp Salt and Pepper, (to taste)
- 1 Tbsp dried Oregano,
- 3 Tbsp Lemon Olive Oil,
- 1 tsp Cayenne Pepper
- 2 Tbsp Unsalted Butter, (melted)
- 3 whole Lemon, (juiced)
- 4 whole Garlic, (cloves)
- 3 Tbsp Parsley, (I had fresh in my freezer, you can also use dried)
Process
- Preheat oven at 400F
- In a bowl add your potatoes, lemon juice, lemon-infused olive oil, salt, pepper, oregano, crushed garlic cloves and cayenne pepper, mix well
- Place potatoes in an oven-safe dish
- Roast for 30min
- Remove from oven and add your melted butter on top
- Bake for another 20-30min or until nice and golden brown
- Remove from oven, garnish with parsley, and serve warm
